CRAZY FOOD COMBO’S

Hehehehe… Have you ever sat down and imagined some crazy food combinations that people eat that actually makes sense and you’re left to wonder who/ where they derived such awesomeness from?πŸ€”πŸ€”πŸ˜πŸ˜πŸ˜€πŸ˜€πŸ˜πŸ˜

Being a foodie I’ve tried such crazily delicious combos and I got hitched😁😁. Today I’ll love to share few of such combinations with you my readers.

First on the list is Coconut and dates, this combo is litπŸ”₯. The first time I tried it out was in 2013 on my way back from lectures with a friend and believe me I was dumbfounded I couldn’t explain the goodness that these two lovely fruits brought to my taste buds.

Another combination is roasted corn and Coconut. Seems everything goes down well with coconut πŸ˜πŸ€”. This is another lovely combo you can’t go wrong with.

Cucumber and roasted groundnuts #madoo. I know rightπŸ™„, who eats cucumber and groundnuts together 🀷? I do and it’s amazingly good.

Carrots and peanut paste/roasted peanuts πŸ˜πŸ˜‹πŸ˜‹

Garden egg and peanuts/peanut paste #hulalaπŸ’ƒπŸ’ƒ. Another beautiful combo

Boiled corn and butter πŸ˜‹πŸ˜‹πŸ˜‹πŸ˜‹πŸ˜‹πŸ˜‹. A lot of people just stare at me and be like what are you saying? YES! Boiled hot corn and butter is something everyone should try and thank me. It’s delicious

Avocado and BreadπŸ₯³πŸ₯³πŸ₯³πŸ₯³πŸ₯³πŸ˜πŸ˜πŸ˜ my favorite. Apart from eating bread with butter or any bread spread, believe me or not avocado is one time bomb you should try with bread. Give it a try and thank me later.

Beans and bread πŸ₯°, this one is a popular combo for all. It’s a life saver in Nigeria, it moves mountains🀣🀣🀣.

These are but a few combos that explodes my taste buds. There are lots of food combinations that will WOW! you. All you need to do is try something new once in a while and you’ll be surprised how good it taste.

SUNDAY’S MEAL

WHITE RICE, CHICKEN STEW AND VEGETABLES

Ingredients for rice and stew: Rice, tomatoes, Red bell and cayenne pepper( Tatashe and shombo), onions, chicken, veg. Oil, curry, thyme, garlic, ginger, chicken stock

Ingredients for vegetables: carrots, green beans, potatoes, macaroni, green pepper, cabbage, onions

Procedure
1. Wash and cook rice
2. Wash and boil your chicken with salt and seasoning cubes, ginger, garlic and onions. once done, fry your chicken and set aside stock for the stew
3. Wash tomatoes, pepper and onions then blend to a smooth paste
4. Pour the paste into a pot and allow to boil until the water is completely drained
5. Put in your veg.oil and allow to fry
6. Then put in your stock, seasoning, curry and thyme and allow to boil until your oil floats at the top. Then put in your fried chicken and allow to simmer. Your stew is ready

Vegetables
Peel potatoes and boil, boil macaroni, wash and cut vegetables.
In a pot put in the boiled potatoes, macaroni and vegetables, a pinch of salt  and allow to steam

Lunch is readyπŸ’ƒπŸ’ƒπŸ’ƒ. Serve and eat with luv πŸ˜‹β™₯️β™₯️

Today’s Special: Samosa

The first time I set out to make Samosa, the outcome was terrible. I just couldn’t get the shape, but on my second trial it came out well#LOL. Thanks to Penny Baklit

Samosa originated from India but it is loved by Nigerians mostly at owambe’s ( Party). It is now a popular small chop at all events in Nigeria. This tiny snack comes with a tedious procedure, most people prefer buying the wraps from shops and making the filling themselves, because of the stress in making it.

Ingredients for the dough: Flour, vegetable oil, salt, water

Ingredients for the filling: Carrots, peas,potatoes,cabbage, grounded beef, onions,turmeric, curry, thyme, Veg. Oil, salt and seasoning cubes.

Procedure: Into a bowl, mix the flour and oil until it looks crumbled, put some salt and add water to form a dough.

Cut and roll into small balls. Flatten the balls with a rolling pin and heat using using a non- stick frying pan( don’t use oil). This makes the wraps translucent and light. Then cut the flattened dough into quarters

Filling: grate your carrots, cabbage, dice your potatoes, and onions. Pre- boil your peas

Into a pan put some oil, fry your onions until translucent, then put in your grounded meat, diced and grated vegetables and all your filling ingredients and stir fry. Season to taste

Now get your wrap and place your fillings. Mix water and flour to seal

Then fry or bake

Ready to serve. Let’s eat (the best part#LOL), savour each bite with luv!

Today’s Menu

Hi Fam! I know it’s been a while. I am so sorry, I had a technical glitch.

Today’s menu is vegetable fried Rice and Chicken

Ingredients: Rice, vegetable oil, sausage, chicken, carrots, green beans, peas, green pepper, bell pepper, onions, garlic, ginger, curry, turmeric, thyme, salt and seasoning cubes.

Procedure:

First wash and season the meat with salt, seasoning cubes, ginger, garlic, curry and thyme, then bring to a boil. Once the meat is cooked, remove the meat from the stock and fry.

Blend the pepper and one onion. Fry with oil, then season and put in your chicken to simmer

Wash and parboil the rice. Then return on fire, add the meat stock, turmeric, cooking oil and water to cook. Taste and add more seasoning cubes and salt and adjust to your taste.

Wash your vegetables and dice along with the sausages. Put in one cooking spoon of oil and stir fry the vegetables, add a pinch of salt.

When the rice is well cooked put in the stir fried vegetables and mix.
Serve your meal and eat with luv!

Fried Rice and peppered chicken

Sallah special: Chin- Chin

This moist, crunchy, delicious snack has magic powers #LOL Every household Christmas Snack in Nigeria. Without chin -chin Christmas is never complete

The process is strenuous but the eating is out of this world.

Ingredients: Flour, butter, egg, milk, baking powder, vanilla and banana flavours, lemon zest, nutmeg, sugar, oil for frying, water

Procedure: sieve the flour and Baking powder, grate the nutmeg and mix with the flour

In a dry bowl, put in your warm water, butter,sugar, eggs, lemon zest, milk and flavours, then mix. Gradually incorporate your dry ingredients and mix properly to form a smooth dough( I use my hands, it’s quite stressful though)

When the dough is set, cut into small balls, roll and cut into smaller sizes. Preheat the oil, then fry the dough.

To be served with Tea or chilled soft drinks

Blog diaries

Hey FAM! Sorry for not posting anything yesterday. I was so engrossed in a friend’s wedding, that I was tired I couldn’t really prepare anything.

I didn’t want to let the week slide without posting anything so I made noodles with chicken and sunny side up(fried) egg

Vegetable noodles

The wedding was a success and the food was great, the small chops super tasty. I really had fun

I enjoyed the food sha!

So this was how I spent my weekend. How did you spend yours?

Sunday Special

Today’s Menu is Jollof rice and Coleslaw with Gizzard. The special thing about this dish is my home made Mayonnaise, which I’ll be sharing the recipe.

Ingredients: 2 eggs, 1 teaspoon salt, 1 Table spoon sugar, pure cooking oil( olive oil, Canola oil) and 4 table spoons of lemon juice.

Procedure: In your blender break your eggs, add the sugar, salt and lemon juice( it gives the Mayo an acid taste and also shields that raw egg smell which most of us dislike). Blend until it looks foamy.

Finally, put in your cooking oil bit by bit until it thickens to your desired consistency. PS: the oil serves as the thickener. Shelf life is mostly one week

So instead of constantly buying Mayo in the market without knowing how healthy the ingredients used are, you can simply make yours at home.

You can free style your mayo using dry chilli to make it spicy or add any funky ingredient of your choice. The only thing is to enjoy and eat your salads with luv!

Masa with Groundnut and Pumpkin Soup

Masa also known as Waina

Today’s meal is Masa and groundnut/ pumpkin soup, not the usual Sunday Rice. I have my whole family over for the weekend, so I decided to do something special for them.


Ingredients: Rice, Yeast, baking powder, Groundnut, Pumpkin, Tomatoes, Pepper, Onions, Beef, Brisket bones, Ginger, Garlic, Salt, Crayfish, Palm oil, Spinach, Seasoning
Preparation
Pick, wash and soak your rice. Boil a cup of the Rice and add to the remaining raw rice. Then grind into a paste. Add your yeast and baking powder and mix properly. Set aside to rise. Once it rises, you can fry using your Masa Pan and vegetable oil.

Soup: Boil your beef and brisket bones with your seasoning and spices.
Blend your pepper, tomatoes and onions
Boil the pumpkin and mash or blend
In a pot put in your cooking oil and fry the tomatoes mixture. Put in your meat stock, beef and th pumpkin. Allow to boil, then add your groundnut and allow to boil and thicken.
Add salt and seasonings to taste. Put in your spinach and your soup is ready.

Today’s Special

White Rice, Beans, Liver and Beef vegetable sauce with Plantain

Today’s special is White Rice and Beans with Liver and Beef vegetable sauce accompanied with Plantain. I thought of making something different and exciting rather than the normal Sunday “Rice and Stew”.

Ingredients: my measurement is for 6 people you can reduce the quantities based on the number of people you are cooking for.
Carrots – 5 large
Green beans – 3 hand full
Peas – 1 cup
Onions – 2 large
Tomatoes – 15 pieces
Pepper – according to your taste
Liver – half a kilo
Beef – half a kilo
Garlic – half teaspoon
Ginger – half teaspoon
Rice – 5 cups
Beans – 3 cups
Vegetable oil – 2 cooking spoons and Plantain

Preparation:
Perboil and cook your Rice and beans and add a pinch of salt
Sauce:
Boil your beef with seasoning cubes, salt, curry, thyme, garlic and ginger. Fry your beef and set aside. Perboil your liver, to enable you dice
Dice your carrots, green beans, liver.
Blend the pepper, onions and tomatoes
Bring the paste to a boil and allow the water to drain, then pour in your vegetable oil and allow the paste to fry.
When it has started sticking to the bottom of the pot it is well fried. Put in your beef stock and peas, allow to boil.PS you can add more seasoning cubes or salt to your satisfaction. Then to the mixture add your diced liver and fried beef, allow to simmer. Finally, put in your vegetables and allow to steam.
I actually put off the fire immediately I added my vegetables. I like them crunchy.and when the soup is left for some time the vegetables become saggy and overcooked.

Liver –     Minerals ( Iron, Sodium, potassium)
